However, since the mango pulp is already sweetened, you may need to adjust the amount of sugar used in the recipe. Here's how you can make approximately 200g of Mango Soan Papdi using sweetened Alphonso mango pulp:

Ingredients:

  • 1 cup (200g) gram flour (besan)
  • 1 cup (200g) sugar
  • ½ cup (100g) ghee (clarified butter)
  • ½ cup sweetened Alphonso mango pulp
  • 2-3 tablespoons water
  • A pinch of cardamom powder (optional)
  • Chopped pistachios or almonds for garnish (optional)

Instructions:

  1. In a heavy-bottomed pan, heat the ghee over medium-low heat until it melts completely.
  2. Once the ghee is melted, add the gram flour (besan) to the pan and roast it on low heat, stirring continuously to prevent burning. Roast until the gram flour turns golden brown and aromatic. This process may take around 10-15 minutes.
  3. Once the gram flour is roasted, add the sugar to the pan and mix well until the sugar dissolves completely and forms a smooth mixture with the roasted gram flour.
  4. Add the sweetened Alphonso mango pulp to the mixture and mix well to incorporate the flavor and color.
  5. If using, add a pinch of cardamom powder to enhance the flavor. Mix well.
  6. Remove the pan from the heat and quickly transfer the mixture onto a greased plate or tray.
  7. Spread the mixture evenly using a greased spatula or the back of a spoon, pressing it down gently to form a smooth layer.
  8. While the mixture is still warm, garnish the top with chopped pistachios or almonds, pressing them lightly into the surface.
  9. Allow the mixture to cool completely at room temperature until it sets and hardens.
  10. Once the Mango Soan Papdi has set, use a sharp knife to cut it into desired shapes or break it into pieces.
